Ingredients:
- 1 pound unripe jackfruit, shredded
- 1 onion, chopped
- 2 cloves garlic, minced

- 1 teaspoon cumin powder
- 1 teaspoon chili powder
- 1/2 teaspoon cinnamon powder
- 1/4 teaspoon tamarind paste
- 1/4 cup vegetable oil
- 1/2 cup coconut milk
- Salt to taste
Instructions:
- Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic, ginger, and spices and cook for 1 minute more.
- Add the jackfruit and cook until softened, about 10 minutes.
- Stir in the coconut milk and bring to a boil. Reduce heat to low and simmer for 15 minutes, or until the curry is thickened.
- Season with salt to taste.
